¡Yo Quiero! Plant-Based Tacos
Plant-based diets are aligned with good health. But for those that grew up on eating tons of meat and are sometimes reluctant to cut it from their diet completely, the thought of adopting a plant-based lifestyle may seem intimidating. This is why it’s essential to know that eating a plant-based diet doesn’t have to mean becoming a vegetarian.
Plant-based diets include high levels of vegetables, wholegrain bread and cereals, legumes, and whole fruits, yet CAN still contain small amounts of lean meats and reduced-fat dairy products.
I have personally cut out all meats from my diet( minus that time I was at ROOTS Picnic and couldn't imagine leaving Philly without trying an authentic Philly Cheesesteak. Or that once a year when I take my pilgrimage to Winners BBQ because it is worth it. Don't judge me). So the next time you think you have to miss out on Taco Tuesday...don't.
¡Yo Quiero! Plant-Based Tacos
What You Need:
1 can of corn
2 Limes
1 can of drained black beans
Pinch of sea salt
Black Pepper
Cilantro
¡Yo Quiero! Guacamole (they have several varieties and I LOVE the kale guac for this)
What You Do:
Mix corn, lime, black beans, cilantro and salt in a bowl to make your “salsa”.
Heat tortillas, add guacamole, and salsa. Top with tomatoes and cilantro.
Enjoy!
